Homemade Taco Seasoning

On a recent taco night I happened to look at the list of ingredients on my packet of taco seasoning. Bah! monosodium glutamate?! For years and years I've made a habit of avoiding food that has this flavor enhancer as an ingredient, but I never checked my taco seasoning. My next thought, of course, was, "I need a homemade taco seasoning recipe." Wouldn't it be nice to mix up your own? It would help rotate your spices, there would be no MSG (or silicon dioxide, soybean oil, or malic adic), you could control the amount of sodium, and (as long as you kept your spices stocked) you would never be left high-and-dry on taco night.

A couple days later I got an update from a blog I follow called Closet Cooking, and wouldn't you know it? It was for homemade taco seasoning! The next time we had tacos I gave it a try, and I tell you, I'll never buy taco seasoning in a packet again. It took just a couple minutes to measure everything out and it was very, very, tasty. I did add one small onion (diced) to the pan after I browned and crumbed the ground beef, and cooked it until the onion was softened. And I might try adding a touch of sugar next time (maybe just 1/4 teaspoon). Thanks, Kevin for your great recipe!

  4. Thank you for your blog and ideas. Probably you know what gives a specific burrito flavor? I mean that the flavor of each taco seasoning ingredients is well known, but ready made (authentic) taco mix as well as burritos have very specific flavor. Thank you again. -- Vadim
