Sausage-Kale Soup

Some days I just want soup. A big bowl of hearty, warm-your-soul soup. This recipe came together as I put stuff in the pot and it was so good. That's one of the reasons why I love soup so much--pretty easy to make and pretty hard to mess up.

The sausage really gave the soup a great flavor, and I loved the way the kale cooked up but still kept it's integrity (it didn't fall apart or get mushy). In fact, I think kale may be my new favorite green for soup. I also threw in some beans for added protein and fiber.


Sausage-Kale Soup

1 12-oz tube Jimmy Dean, 50% less fat sausage
2 medium carrots, diced
2 ribs celery, diced
1 green bell pepper, diced
2 cloves garlic, minced
1/2 teaspoon dry thyme
1/2 teaspoon dry tarragon
1/2 teaspoon fennel seeds
1/8-1/4 teaspoon red pepper flakes
3/4 teaspoon kosher salt
1 14.5-oz can diced tomatoes, undrained
1 15-oz can garbanzo beans, drained and rinsed
1/2 cup dry red or green lentils
6 cups chicken broth
1 cup water
3 cups kale, chopped (I remove the stem)

1. Heat a large pot over medium heat. Cook and crumble the sausage until it's no longer pink. Add the carrots, celery, bell pepper, and garlic, and cook, stirring often, until the veggies are softened, about 5 minutes.

2. Add the thyme, tarragon, fennel seed, red pepper flakes, and salt, and cook for 3 more minutes. Add the tomatoes, garbonzo beans, lentils, chicken broth, and water, and bring it to a boil over high heat. Reduce the heat to maintain a simmer, cover, and simmer until the lentils are tender, about 40 minutes.

3. Add the kale and cook until it's tender, about 10 minutes.

Makes about 8 1-cup servings.

  1. Sausage and Kale is one of my favorite soups especially with lots of fennel like you have added here. Chickpeas sound good I usually use white beans but will try that next time!

  3. The soup looks great! I love swiss chard too and might try your recipe but use chard instead, although I'm sure it's wonderful with the kale!

    So Jimmy Dean has 50% less fat sausage? That's why I love blogging. I wouldn't have known that if I didn't read it here. Thanks! Must try. Turkey sausage doesn't always do it for me. :)

  5. Looks delicious. I am a huge kale fan...I can eat it sauteed very simply but I also love it in soup, it really holds up well. This looks perfect for a cold night!

  7. @Laura, it *was* so good the next day :) I really feel like I came late to the kale party...I tried it for the first time about a year ago. Sad for me! ;)

    There is a link at the bottom of each LinkWithin block. If you click on it you'll go to their website and you can make one for your site. Super easy. And it totally works. I love to watch my Live Activity Feed (sad, I know), and lots of people use the LinkWithin to navigate my blog. :)

    P.S. Made more pizza sauce today with my 2 year-old...I think of you every time I make it ;)
