Peach Crisp: Cooking with Alicia & Annie

I made this crisp as part of Cooking with Alicia & Annie's September event giveaway. For their contests you pick any recipe from either Alicia's or Annie's website, make it, blog about it, and submit the perma-link. Then they use Random.org to pick a winner. I can pick any random recipe? Super fun, right?

The peaches were a gift from my cute neighbor in my new neighborhood. As soon as she brought them over I knew I wanted to make a peach crisp; that made it easier to pick a recipe from the hundreds (thousands?) of recipes available on the two websites.

For no particular reason I decided to find my recipe on Annie's website (I'll use Alicia's next time). I found a peach crisp recipe listed in the fruit section, clicked on the link, and this is what came up:

Peach Crisp

4 med. peaches, sliced (about 3 c.) or 2 cans (16 oz. each) sliced peaches, drained
3/4 c. Bisquick baking mix
1/2 c. quick cooking oats
1/2 c. packed brown sugar
3 tbsp. margarine or butter, softened
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg

Instructions:

Hum...notice anything missing? Like mixing and baking instructions? Any kind of instructions?

Now, I'm the type of person who is a sucker for things with problems--the stuffed animal with the wierd-shaped face that no one will want to buy, the otherwise perfect apple with a little bruise--so when I saw this very sad recipe I knew I'd have to make it. I'm a fairly good cook, and I figured I'd be able to come up with some redeeming instructions.

To save the recipe, I changed a few things: I make my own pancake mix, so I substituted my mix for the store mix; I added sugar and flour to the peaches so they would be juicy but not runny; I used regular oats because that's what I had; I took the "margarine" option out of the ingredient list--trans fats and all that. What I ended up with was quite scrumptious, and we gobbled it up after dinner. In fact, my husband just wanted it for his dinner :) Enjoy!

Peach Crisp
Printable Recipe

3/4 cup my buttermilk pancake mix
1/2 cup regular oats
1/2 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3 tablespoons butter, softened
4 medium peaches, diced (about 3 cups)
3 tablespoons sugar
2 tablespoons all-purpose flour

1. Heat your oven to 400 and spray a 11x8 1/2-inch baking dish with non-stick spray.

2. In a medium bowl, combine the pancake mix, oats, brown sugar, cinnamon, and nutmeg; stir to combine them well.

3. Add the butter and use two forks to cut and press the topping ingredients together. The mixture will look very dry and crumbly. Set it aside.

4. In a medium bowl, combine the peaches, flour, and sugar; toss gentle to coat the peaches evenly.

5. Turn the peaches out into the prepared baking dish, and spread them into an even layer.

6. Working with a small amount at a time, gently squeeze the topping in your hand to make it hold together, and then crumbled it over the peaches.

Mmmmm...topping...

7. Bake for 40-45 minutes, or until the topping is nicely browned and the juice is bubbling around the edges and in a couple places in the center. Remove from the oven and let it cool (good luck) before serving. You can serve this warm or room temperature.

This was delicious and beautiful, the crunchy, crispy topping a wonderful counterpoint to the soft, sweet peaches.

But it was devine with vanilla ice cream.
